Vegan Double Sandwich

Ingredients

  • 1 Polarbröd Rye Square
  • 20 g cashew nut paste
  • 20 g vegan cream cheese
  • 5 g miso paste
  • 30 g diced natural tofu
  • 30 g soya beans
  • 5 g sriracha mayonnaise

Do this

Tip! Use frozen soya beans, as they retain better colour and save time

  1. Mix together the tofu, soya beans, miso paste and sriracha mayonnaise
  2. Spread the cashew paste on one of the slices
  3. Spread the vegan cream cheese on the other slice
  4. Add the tofu mixture to the vegan cream cheese slice
  5. Lay the other slice of bread on top and press down lightly
  6. Cut the sandwich in two with a sharp knife
  7. Stack together, wrap and place in the fridge
