- 8 Polarbröd Rye Square
- 6 avocados
- 1 red onion, finely diced
- 1 tsk finely shredded coriander
- 1 tsk olive oil
- Juice from one lime
- 4 tsk vegan mayonnaise
- 50 g baby spinach
- Gently mash the avocado into chunks and mix it with the onion, coriander, olive oil and lime juice. Salt to taste.
- Spread mayonnaise on each slice of bread.
- Spread the avocado mix evenly on four slices of bread and cover with spinach leaves.
- Top with the remaining slices of bread.
- Cut each sandwich diagonally and serve.
