tomato, cucumber and blueberry
Bread recommendation
Ingredients
- 12 Polarbröd Small Wheat Round
- Tomato:
- 50 g cream cheese
- 20 g sundried tomatoes
- cherry tomatoes
- fresh basil
- salt
- Blueberry:
- 50 g cream cheese
- 50 g frozen blueberries
- a pinch of salt
- a pinch of sugar
- perhaps a few fresh blueberries
- Atsina cress or mint, for example, as a garnish
- Cucumber:
- 50 g cream cheese
- 100 g cucumber
- 5 drops tabasco sauce
- half a red chilli
- 1 tbsp olive oil
- salt
Do this
Tomato
- Mix the cream cheese with finely chopped sundried tomatoes (or blend to a creamy consistency), then season to taste with salt.
- Spread the cream cheese mixture on four of the Rounds and top with halved cherry tomatoes and fresh basil.
Blueberry
- Mix the cream creese with half of the defrosted blueberries, then season to taste with a pinch of salt and a little sugar.
- Spoon the mixture onto four of the Rounds and top with the remaining blueberries. Garnish with fresh blueberries (if in season) and a little cress. Mint also makes an excellent garnish.
Cucumber
- Mix together chopped cucumber, tabasco sauce, chopped chilli, olive oil and a little salt.
- Spread the cream cheese on four of the Rounds and top with the chopped cucumber mixture.
