  • 12½ g pine nuts
  • ½ pots basil
  • ¼ clove garlic
  • 25 g grated parmesan cheese
  • 50 ml olive oil
  • ½ tomatoes
  • ½ mozzarella balls
  • 3 anchovies
  • salt and black pepper

Grilled sandwich with pesto, anchovies and mozzarella

  • 12½ g pine nuts
  • ½ pots basil
  • ¼ clove garlic
  • 25 g grated parmesan cheese
  • 50 ml olive oil
  • ½ tomatoes
  • ½ mozzarella balls
  • 3 anchovies
  • salt and black pepper

Do this

  1. Make pesto by blending the pine nuts, basil, garlic, parmesan and olive oil in a blender or using a handheld mixer. Season to taste with salt and black pepper.
  2. Slice the tomatoes and mozzarella. Spread the pesto on one half of each Sub. Add the tomato, mozzarella and anchovies, and then place the other half of the Sub on top.
  3. Grill between baking parchment until the cheese melts. Serve with a salad and perhaps a few oven-roasted cherry tomatoes.
